The story began when Sulpice Debauve, pharmacist to King Louis XVI, was asked in 1779 to help ease the headaches of the Queen Marie Antoinette, who complained of the bitterness of her "medicines". The scientist was aware of Marie-Antoinette's infatuation with chocolate, so he created a unique chocolate blend to mask the unpleasant taste of medicine.

At that time, Chocolate was already a very famous luxury product, but it was only used as a drink. Sulpice Debauve innovated by creating the first chewable Chocolate with a solid form. His coin-shaped chocolates were named Pistoles by Queen Marie Antoinette (Pistole were a type of Gold coin). As the Queen loved it, Debauve continued to create a variety of flavored Pistoles for her.

The success of this creation led to the establishment of a chocolate boutique in 1800, which quickly gained a prestigious clientele among the French aristocracy and Parisian Bourgeoisie. It became the official chocolate supplier for Emperor Napoleon and of kings Louis XVIII, Charles X and Louis Philippe.

Sulpice was later joined by his nephew, Antoine Gallais, and the name Debauve & Gallais was adopted in 1823. They expanded the business, introducing innovative chocolate products and refining their recipes to perfection.
