The name of Börze (“Bourse” in English) was inspired by the nearby Stock Exchange Palace on Szabadság Square. The restaurant has just opened in 2017 but has quickly become a frequent destination for locals and tourists.
The restaurant, is designed in a classic and elegant style turn of the 20th century, where were part of the middle class’ everyday life.
You can find some charming archaic drawings of animal characters inside, the logo is also a character, a guineafowl. These hand drawings often appear in Hungarian folktale, bringing a nostalgic atmosphere. The guineafowl character in the logo represents a homely kitchen in a very elegant, grateful style.
This is a restaurant and a coffee shop at the same time, the two parts are connected by this short corridor.
The talented chef, Zoltán Forster revives classic Hungarian dishes with some Asian fusion, his dishes are more attractive.
Fried duck liver served with pear jam, soft bread, homemade chutney is just delicious. You can see pieces of pear in the jam, it's more juicy and tasty with the liver. In the side, these are some slices of salt yellow radish, very familiar to asian people.
Goulash, the most popular dish in Hungary, has a characteristic flavor with a balance between meat and vegetables like carrot, potato, slightly spicy. This dish is better with bread.
The key of this dish is a homemade paprika sauce with flavors of fried onions, tomatoes and pepper. Then, the chicken is cooked in this magic sauce to be juicy and tasty. It's served with Hungarian noodles and sour cream.
A homemade dish of layered potatoes with two lamb sausages. We have also two soft eggs, just boiled for 6 minutes. In the side, we have the sour cream foam, a traditional thing in Hungary.
Mousse with 3 layers, the bottom is a compote of mango and pear, above is a layer of pistache mousse and fresh cream. This dish is decorated with mangoes, pomegranate seeds and pistachio. Mousse is not too sweet, very delicious and attractive in terms of taste and texture.
It's not like a real dumpling we know, these are two cakes really moist inside, is served with sweetened sour cream and homemade apricot jam. The cake is covered with a layer of dried coconut and walnut crumb and is served warm.
The ingredients used are fresh and seasonal, carefully selected. The restaurant is in a quite central location, very convenient to try during your trip. The restaurant is quite large but very crowded, you should book in advance. You have a big choice of food and drinks, if you come here, don't forget to try attractive drinks.
